Salads with dried fruits will diversify your menu. They are delicious, healthy, and easy to make. The most common and valuable dried fruits are raisins, apricots, dates, and prunes. They are very nutritious and contain three times more fiber, vitamins, and minerals than fresh fruit.

Beet salad with dried fruit

Ingredients for 4 servings:

  • 2 medium beets
  • 2 handfuls of walnuts
  • 10 pieces dried apricots
  • 6 pieces of prunes
  • 1 pack of natural yogurt without sugar (125 g)

How to cook:

  1. Prepare all ingredients.
  2. Boil the beetroot, peel it and grate it on a coarse grater. Prunes and dried apricots rinse thoroughly and pour hot water, but not boiling water, for 40 minutes, cover. Wash the walnuts and chop them.
  3. After soaking, cut the dried fruit into 6 pieces each. Add the nuts, dried fruit and yogurt to the grated beets. Mix everything well. 

Salad with carrots and dried fruits

Cooking time – 20 minutes.

Ingredients for 2 servings:

  • 250 g of carrots
  • 75 g of dried apricots
  • 75 g of pitted prunes
  • 5 g of dill or fennel seeds
  • 2 tablespoons olive oil
  • Salt to taste

How to make:

  1. Preparing everything we need.
  2. Wash prunes and dried apricots. Pour boiling water, and leave until cool. Then take out of the water and finely chop.
  3. Wash carrots, and grate them on a coarse grater.
  4. Grind the seeds lightly in a mortar.
  5. Mix carrots, dried apricots, prunes, and dill (fennel) seeds. Lightly salt. Fill with oil.

Beet salad with prunes and apples

A simple, quick, and tasty snack. With a slight apple sourness, a sweet note of prunes, and a pleasant beet flavor.

Ingredients:

  • 120 g beet
  • 120 g apple
  • 100 g pitted prunes
  • 1 garlic
  • Salt to taste
  • 30 ml of olive oil

How to cook?

  1. Boil the beets for an hour, cool them under cold water, peel and cut into julienne or grate them on a grater for Korean carrots.
  2. Apple peel and cut into julienne or grate on a grater for Korean carrots.
  3. One garlic clove peeled and grated on a fine grater or pass through the press.
  4. Wash prunes and pour boiling water for 10 minutes. Drain the water and cut prunes into julienne or small pieces. Add to the salad.

Ingredients for 1 serving:

  • 1 pc carrot
  • 3 pcs dates
  • 2-3 teaspoons olive oil
  • 1 teaspoon lemon juice
  • 1/2 teaspoon of honey
  • salt to taste

How to cook?

  1. Finely chop the dates.
  2. Grate carrots on a fine grater.
  3. Make a dressing of honey, lemon juice and olive oil.
  4. Mix the carrots and dates with the dressing, place on a plate and then place the feta slices on top.

Carrot and apple salad with raisins and walnuts

Favorite salad for breakfast!

Cooking time – 15 minutes.

Ingredients for 4 servings:

  • 2 medium carrots
  • 1 apple (any kind of your favorite)
  • 15 g of raisins
  • 20 g walnuts
  • 2 tablespoons lemon juice
  • Olive oil to taste for dressing

Cooking:

  1. Raisins rinse and pour boiling water.
  2. Peel and grate carrots on a coarse grater.
  3. Peel and core the apple grate on a coarse grater.
  4. Add lemon juice.
  5. Drain the water from the raisins, rinse again and add to the carrots and apple.
  6. Wash and chop walnuts add to the rest of the ingredients.
  7. Dress with olive oil and stir. The salad is ready.
