If you keep a healthy eating plan, you don’t have to cook something unusual and give up dessert altogether. You can bake a delicious cake from dried fruits.
This cake is made without butter and sugar, which cannot fail to please those who are on a diet. At the same time, it turns out very soft and moderately sweet. Lovers of dried fruit and energy bars will appreciate it.
- 250 grams of dried dates
- 1/2 cup of raisins
- 1/2 cup of prunes
- 1/2 cup of ground almonds (or other nuts to taste)
- 1.5 cup boiling water
- 10 g of baking powder
- pinch of salt
- pinch of vanilla
- 2 eggs
- 2 cups of spelled or wholemeal flour.
Cooking by steps:
Step 1: Finely chop dried fruit, pour 1.5 cups of boiling water and leave for 30-40 minutes.
Step 2: We beat the eggs with a whisk and add them to the dried fruits. We do not pour water from them!
Step 3: In a separate bowl, mix the dry ingredients – flour, baking powder, vanilla, a pinch of salt, and ground nuts.
Step 4: Add the dry ingredients to the liquid ingredients and mix thoroughly. You should get a homogeneous dough with a consistency like thick yogurt.
Step 5: Grease a baking dish with olive oil and place the dough in it. Bake for 40-50 minutes at 180 C° (356 °F).
Step 6: Let the cake cool in the form. If you want, you can grease the top with some alcohol (for example, brandy). According to the recipe, it is recommended to put it in the fridge for the night and try it in the morning.
