Oatmeal carrot cake recipe

Original and delicious cake with no flour, sugar, eggs – oatmeal carrot cake. It’s a tasty treat for everyone who keeps to a diet. The 100 grams of this cake contains 272.7 kcal.

What you’ll need for cooking:

  • 130 grams of oat flakes;
  • 1 carrot;
  • 1 big apple;
  • 60 g of honey;
  • 5 tbsp. of olive oil;
  • juice of half lemon;
  • salt – to taste;
  • cinnamon (ground) – to taste;
  • ginger (dry, ground) – to taste;
  • cloves (dry, ground) – to taste.

You can make the vanilla glaze to decorate your oatmeal carrot cake.

You’ll need these components:

  • 70 grams of powdered sugar;
  • vanillin – to taste;
  • 1 tbsp. of warm water.

Cooking oatmeal carrot cake:

Step. 1. Grind the oatmeal flakes in a blender or a coffee grinder.

Step 2. Mix the ground oatmeal and salt in a bowl. Add spices (cloves, ginger, cinnamon) to taste, honey, and olive oil.

Step 3. On a small grater grind carrot and a peeled apple. Add to the bowl to oatmeal flakes and spices. Thoroughly mix to a homogeneous mass.

Step 4. Add half lemon juice and mix again.

Step 5. Put the dough in a silicone baking mold, greased with olive oil. Straighten the dough into shape.

Step 6. Bake the cake in the oven at 180 ° C (356 ° F) for 25-30 minutes.

Step 7. Prepare the vanilla glaze. Put sugar powder in a bowl, add vanilla to taste, gradually add warm water, stirring at the same time.

Step 8. Remove the cake from the mold and let it cool down. The cake should have a slightly moist texture. Smear the cake with a vanilla glaze on top. You can also decorate the cake with berries or slices of fruit to taste.
