- Wheat flour – 1.5 glasses;
- Rice flour – 1 glass;
- Lemon zest and juice from 2 lemons;
- Аpplesauce – 1 glass;
- Brown sugar – 0.5 glass;
- Olive oil – 1/4 glass;
- Baking powder – 1 bag (14 grams);
- Pinch of salt;
- Sugar powder for decoration (optional).
Cooking lemon pie vegan step by step:
Step 1. Wash the lemons, grind the zest. Squeeze the juice out of the fruits.
Step 2. Prepare the applesauce. You’ll need two large apples, 80 grams of sugar and some water. Peel the apples, grate them on a grater or grind them in a blender, mixed with sugar and water. You can replace sugar with stevia or maple syrup!
Step 3. In one bowl mix olive oil, applesauce, sugar, pinch of salt, juice, and lemon zest. Mix it well.
Step 4. In the other bowl, combine two types of flour and baking powder.
Step 5. Combine both mixtures. Knead the dough.
Step 6. Put the dough in a baking mold covered with parchment.
Step 7. Bake it in the oven for 30-40 minutes at 392 °F.
Take the finished lemon pie out of the mold and sprinkle it with powdered sugar.
