Rice cookies. Diet recipe

Rice flour is great for diet baking. It is gluten-free. Rice flour contains useful minerals, vitamins, and trace elements. Cookies made with this flour are crumbly and shortbread. 

Nuts, dried fruits, fruits, and berries, as well as spices, are a great addition to the rice cookies.

In this article, I will share two diet recipes for rice cookies.

Recipe 1.

Ingredients:

  • Rice flour – 200 g
  • Sour cream – 4 tbsp.
  • Coconut oil – 2 teaspoons
  • Baking soda – 1/4 of teaspoon
  • Honey or stevia – to taste
  • Cinnamon – 1 pinch
  • Any nuts to taste – 100 g.

Cooking: 

In a separate bowl, mix the flour, baking soda, coconut oil, sour cream, stevia, and cinnamon.

The dough should be lumpy (like shortbread).

Knead well and bring the dough to a homogeneous state.

Preheat the oven to 180 °C (356 °F). Take a baking tray and cover it with parchment or a silicone mat.

From a small piece of dough, form cookies and place them on the baking tray. Do this until the dough runs out. Place in the oven for 15 minutes.

Sprinkle the rice cookies with nuts a couple of minutes before they are ready and bake for another 3 to 4 minutes.

Take out of the oven, let the cookies cool.

Make tea and taste 🙂

Recipe 2. Rice cookies with fruit and raisins

Ingredients:

  • 3/4 of a cup of olive oil;
  • 100 g sugar or sweetener;
  • 2 glasses of rice flour;
  • 1 banana;
  • 200 grams of raisins;
  • 1 apple;
  • 100 grams of nuts (hazelnuts or any other);
  • 1.5 tsp. cinnamon;
  • 1 tsp. baking soda;
  • 1/2 of tsp. salt;
  • 1/2 of tsp. nutmeg;
  • 1/4 of tsp. ground cloves.

Cooking:

First mix the dry ingredients: flour, baking soda, salt, and spices. 

Then combine the sugar, olive oil, and banana slices. Whip it all in a blender until homogeneous.

Add half of the dry mixture to the sweet liquid mass. Also add raisins, chopped nuts, and diced apple.

Pour the remaining half of the dry flour mixture into the dough. Mix everything well. 

Turn on the oven to preheat to 180 °C (356 °F). Cover a baking tray with parchment and use your hands to form small rice dough cookies. Place the cookies on the baking tray.

Bake for 15 minutes. Let the ready cookies cool a bit and you can enjoy them.
